I love Mexican foods! I love burritos, tacos, and especially nachos! It can be a Simple Nacho Salad, Fully Loaded Nacho, or any other type of dish which incorporate Nachos. Nachos are everything in my book!
With a Simple Nacho Salad you can make it extremely simple by adding just enough to it. Or if you want to be more fancy, but still simple. You can go just a little over the top, and add anything you like. It is a easy, yet simple meal. And it is really hard to mess up and go wrong.
For us working gals, who’s coming home from work to starving kids. You’re looking for something real quick to cook during the week. Or hell even on the weekend. Something the kids (and hubby) would absolutely love. So if you’re one of those girls such as myself, I have got just the recipe for you!
Simple Nacho Salad
1 Bag of Nachos (Any kind will do. I usually use the Lime Flavored Tostitos)
1 Llbs Of Ground Turkey/Ground Beef
Seasoning Of Your Choice
1 8oz Can Of Black Beans
1 Small Onion
1 8oz Can Of Diced Tomatoes
8 oz Of Sour Cream
Cheese (Cheddar and/or Mozzarella)
Tomato Topping (Opional)
1 Can Of Corn Kernels (washed)
1/2 of Red Onion
2 -3 Splashes Of Lime Juice
2 Haas Avacardos
Salt & Pepper (To taste)
Fresh or Store Brought Lime Juice
1/2 of Red Onion
1 Small Tomato
2-3 Springs Of Cilantro
If you are planning on making tomato topping (salsa) then you would do that first, so all the ingredients has a chance to gel together. You would chop your tomato (you can use half if you are not making a lot) 1/2 of red onion, and cilantro. Place in a small container, along with the open and washed can of corn. Add lime juice. If you are using fresh lime, then only use 1/2 of the lime. Refrigerate for 30mins.
Make sure your avocado is ripe. Peel and use a potato masher (if you do not own one, use a folk) mash until it’s mashed throughly. Chunks are ok, keep them. It gives our guacamole character. Dice the 1/2 of red onion, cilantro and add to avocado. Use juice from 1/2 of lime, or 2-3 small squirts of bottled lime juice. Add salt and pepper to taste. Also refrigerate for 30 mins.
Season ground meat as you normally do. Stir fry until no longer pink and throughly cooked, drain. Open can of beans and wash them, add to cooked meat, along with diced tomatoes. Allow to simmer for at lease 15-20 minutes, or until there is no more liquid in meat mixture.
Rinse and chop your lettuce, scallions and set aside.
Now here comes the fun part. Add your chips, then your meat mixture, shredded cheese (I like my cheese melted so before I add my meat on top of the chips. I microwave the meat, with shredded cheese until it’s melted). Topped with lettuce, guacamole, tomato mixture, sour cream & scallion. And if you want to be fancy, you can also add a small squirt of lime juice to your sour cream. I doubt you would need it, if you are adding the tomato mixture.
